MANGO FRUITS SALAD

Mango Salad is not something you can enjoy any time of the year Because Mangos are seasonal. However, they make a beautiful side dish to enjoy throughout the mango season. It is flavorful and amazingly gorgeous because of the colorful fresh fruits and herbs that come to play.

For this mango recipe, you’ll need two types of fresh mint leaves for garnishing. The regular mint leaves for sprinkle and spearmint leaves for syrup. I use Neelam mango, also known as dusha or Dan-Abuja in Arewa (northern Nigeria), Watermelon, and pineapple.

Because pineapple is not always sweet, I make sure the one I am using is not sour. A tangy Pineapple will distort the desired taste of the recipe. Make syrup before you start dicing fruits. All fruits should be uniformly diced and put in a presentable bowl. Add spearmint syrup, mix gently, and garnish with chopped mint leaves. You can include other fruits, but be sure they complement each other. You’ll need to know if the fruits you’re using stay long after preparation or not; To avoid discoloration and acid reaction with citrus fruits, or a mushy salad

INGREDIENTS

¼ Watermelon

¼ Pineapple

Two Dusha Mango

1/3 cup Chopped Mint leaves

½ cup spear Mint syrup

Serving: 3





PROCEDURE

1. Start by crushing fresh spearmint leaves in a cup. Add sugar and warm water. Mix and Allow to cool down. Using a strainer, strain to remove leaves and store away your mint syrup in a fridge.

2. Wash all fruits and mint leaves. Remove seeds in Watermelon; pluck out brown head in pineapple, and separate mango plump from the seed.

3. Separately, nicely chop mint leaves and set aside.

4. Dice all fruits uniformly, put in a presentable bowl. Add mint syrup and mix gentling;

5. And, Sprinkle mint all over the fruit salad.
